In 1907, through kombu dashi tofu soup, Professor Kikunae Ikeda was convinced that there was another basic taste besides sweet, salty, sour, and bitter.

He began analysing the composition of kombu dashi.

He found glutamate, the key component that enhanced the deliciousness, he named it as “umami”.

He collaborated with a businessman named Mr. Saburosuke Suzuki II in producing AJI-NO-MOTO® Umami Seasoning since 1909.
